Khashi

Khashi is a traditional Georgian soup made from beef tripe and feet. It is often consumed in winter, as it is believed to strengthen the body and help fight colds. Khashi is especially good with garlic vodka.

    Sprinkle baking soda on the cleaned tripe and feet, add water to cover, and let it sit for one hour.

    Then rinse in running water.

    Add water again and bring to a boil, skimming off any foam. Discard the first boiled water.

    Add plenty of water again and cook for a long time, about 4-5 hours, until the meat is very tender.

    Then add milk, bring to a boil, and turn off the heat.

    Crush the garlic and add salt. Serve with freshly crushed garlic.
