Kubdari

Kubdari is a delicious meat-filled pie of Svan origin. The dough is leavened, and the filling is made from beef or pork, flavored with Svan salt and spices. Traditionally, Kubdari is baked in a tone or oven.

    Dissolve the yeast and sugar in warm water. Let it sit for 10 minutes.

    In a large bowl, mix flour and salt. Add the yeast water and oil. Knead the dough.

    Cover the dough and let it rise in a warm place for 1 hour.

    While the dough is rising, prepare the filling. In a bowl, mix the chopped meat, onion, garlic, Svan salt, utskho suneli, cilantro, and red pepper flakes (if using).

    Preheat the oven to 200°C.

    Divide the dough into 4 equal parts. Roll out each part into a round shape.

    Place the filling on each piece of dough and seal the edges well.
