    Mince the pork through a meat grinder, preferably using a coarse plate, to retain texture.

    To the minced meat, add finely chopped onion, crushed garlic, red pepper, ground coriander, blue fenugreek, salt, and black pepper. Mix thoroughly until the mixture is uniform.

    Fill the cleaned pork intestine with the prepared meat mixture. Do not overfill to prevent bursting during cooking. Divide into approximately 15-20 cm long sections by tying with string or twisting the intestine.

    Fry the prepared kupati over medium heat in a pan or on a grill until golden brown and thoroughly cooked. Turn periodically to ensure even cooking.
