Leek Pkhali
Leek Pkhali is one of the most delicious and healthy dishes in Georgian cuisine. It is made from a blend of sautéed leeks, walnuts, and aromatic spices, giving it a unique taste and texture. It's perfect as a side dish or a standalone meal.
Ingredients

- White wine vinegar1 tbsp
- ground coriander1 tsp
- Blue Fenugreek1 tsp
- Salt½ tsp
- Vegetable oil2 tbsp

Wash the leeks thoroughly, cut them into pieces about 2-3 cm long. Finely chop the onion.

Bring water to a boil in a large pot, add the chopped leeks and cook for 5-7 minutes until tender. Drain and squeeze out excess liquid thoroughly.

Heat oil in a pan, sauté the finely chopped onion until golden. Add the squeezed leeks and sauté for another 5 minutes.

Grind or blend walnuts, garlic, ground coriander, blue fenugreek, red chili pepper (if using), and salt together until a uniform paste is formed. Add the vinegar.

Mix the walnut paste with the sautéed leeks. Stir well to ensure all ingredients are evenly distributed.

Transfer the leek pkhali to a serving dish, garnish with pomegranate seeds (optional), and chill in the refrigerator for at least 30 minutes for the flavors to meld.
