Mchadi Baskets with Beetroot Filling
This is a Georgian dish made from mchadi (cornbread) and a beetroot filling. Mchadi is a cornbread, and the filling is made from boiled beetroot, walnuts, garlic, and spices.
Ingredients

For the mchadi: Combine corn flour, matsoni, baking soda, and salt. Add warm water and knead the dough.

Cover the dough with a cloth and let it rest for 15 minutes.

Preheat the oven to 180 degrees Celsius.

Place the dough in silicone molds.

Bake in the preheated oven for 20-25 minutes, or until golden brown.

For the filling: Grate the cooked beetroot.

Blend walnuts, garlic, lemon juice, and a little warm water.

Mix the blended mixture with the grated beetroot. Add dried coriander, blue fenugreek, pepper, salt, and vinegar.
