Mini Calzones with Tomato and Cheese
These are delicious, small-sized calzones, perfect for a snack or a party. The dough is soft and airy, while the filling is flavorful and juicy. Serve hot with your favorite sauce.

Dissolve the dry yeast in warm water and let it sit until it bubbles.

Sift the flour into a bowl, add 1/4 cup Parmesan cheese, 1 tsp salt, 2 tsp sugar, 1 tsp baking powder. Mix well and pour in the yeast water.

Knead a soft, elastic dough. Pour a little oil into a bowl, place the dough ball in it, cover with a tea towel and place in a warm place for 1 hour, until it increases in volume.

Remove the dough to a floured surface and divide into 8 balls.

Roll out each ball by hand, spread 1 tbsp of tomato juice, sprinkle with grated Parmesan cheese, chopped basil and fold over, sealing the edges like a varenyk.

Heat plenty of oil in a deep frying pan or thick-bottomed saucepan (enough to completely cover the calzones), add the pieces of dough one by one and brown on all sides.

To remove excess fat, transfer the fried calzones to a paper towel. Serve with your favorite sauce. Serve hot.
