"Miracle" Paska (Georgian Easter Bread)

This is a Paska recipe that is very popular on social media. It turns out very airy and delicious. The recipe requires a little more time and attention, but the result is definitely worth it.

  • Buttermilk150 ml
  • Milk360 ml
  • Vanilla extract5 ml
  • Vegetable oil80 ml
  • Cognac or rum25 ml

    Make a goglimogli from 4 egg yolks + 200g sugar. Save the egg whites.

    Add matsoni and sour cream to the goglimogli.

    Dissolve 200g sugar and 160g butter + salt in 360ml milk.

    In 30ml of warm milk, dissolve the yeast + 1 tsp sugar + enough flour to get the consistency of sour cream. Set aside to proof.

    Whisk 4 egg whites until stiff peaks form + vanilla (whisk the egg whites without sugar).

    Mix all the above ingredients together, finally add the prepared meringue. Let it rest for 5-10 minutes.

    Pour 80ml of oil into the risen mixture, stir and add 500g of flour. Knead the dough well and let it rise.

    When the dough has risen, add 100-200 grams of dried fruits and spices dredged in flour. Let it rise again and put it in the molds.

    Wait for the dough in the molds to start rising.

    Put in a preheated oven. Temperature 160°- 165°.
