    Wash and dry the watercress with paper towels.

    Dry the watercress in the oven at 110°C for 30-35 minutes.

    Slice the Racha ham into very thin slices.

    Place the ham between baking sheets, put a weight on top, and bake in the oven with the watercress at 110°C for 30-35 minutes to make chips.

    Roast the barley flour and let it cool.

    Add chkinti cheese, sweet corn kernels, grated smoked sulguni, oil, salt, and water (as needed).

    Make cone shapes from baking paper, press the chvishtari mixture into them, and hollow out the center. Place foil inside to maintain the shape during baking.

    Bake in the oven at 150°C for 15 minutes, then increase the temperature to 170°C and bake for another 15 minutes.

    Cool, remove from the mold, and remove excess chvishtari mixture from the inside.

    For the jonjoli cream, blend jonjoli, Kakhetian oil, and red onion with a hand blender, then strain through a fine sieve to remove any coarse particles.

    Whip the butter until airy, then whip in the cream cheese and add the blended jonjoli mixture, salt, and lime zest for flavor.

    For the cloud biscuit, whisk the egg with all the ingredients and transfer to a siphon, charge with 4 capsules, shake, and wait 5 minutes, then pour into a disposable cup halfway and bake in the microwave for 50 seconds at 400 watts.

    Cool and remove from the mold.

    Cut the green apple into sticks and cold smoke for 5 minutes.
