    Prepare the dough: In a bowl, mix flour, water and salt. Knead into an elastic dough. Wrap in plastic wrap and let rest for 30 minutes.

    Prepare the filling: Heat oil in a pan and sauté the mushrooms until the liquid evaporates.

    Add the chopped onion and continue to sauté until the onion softens.

    Remove the pan from the heat and add chopped cilantro, utskho suneli, dried coriander, red pepper flakes (optional) and black pepper. Mix well.

    If the filling is too dry, add a little water to achieve a minced meat consistency.

    Cool the filling.

    Roll out the dough into a thin layer and cut out circles.

    Place the mushroom filling on each circle and shape into khinkali.

    Boil water in a large pot. Add the khinkali and cook until they float to the surface and for another 5-7 minutes.
