Mushroom Soup
This is a classic, hearty, and aromatic Georgian mushroom soup, especially delicious in cold weather. It's simple to prepare and perfect as a light lunch or dinner.

Wash the mushrooms thoroughly and chop them into medium-sized pieces. Finely chop the onion.

In a large pot, melt the butter over medium heat. Add the chopped onion and sauté until softened and golden, about 5-7 minutes.

Add the chopped mushrooms and sauté until the mushrooms release their liquid and it evaporates, about 8-10 minutes.

Sprinkle in the flour and mix well to coat the mushrooms and onions. Cook for 1-2 minutes, stirring constantly.

Gradually add the water, stirring continuously to prevent lumps. Bring to a boil, then reduce heat and simmer for 10-15 minutes until the soup thickens.

Season with salt and black pepper to taste. Stir well.
