Nazuki (Sweet Bread)

Nazuki is a traditional Georgian sweet bread, particularly popular in Shida Kartli. It is distinguished by its soft, slightly sweet dough and pleasant aroma, often achieved through the use of matsoni (Georgian yogurt) or milk. It's perfect served with tea or coffee.

    Dissolve yeast and 1 tsp sugar in warm matsoni. Let it sit for 10-15 minutes until foamy.

    In a large bowl, mix flour, remaining sugar, and salt. In a separate bowl, whisk eggs, melted butter, and vanilla (if using).

    Add the yeasted matsoni and egg mixture to the flour mixture. Knead a soft, elastic dough. Add a little more flour if needed.

    Cover the dough with a clean cloth and place it in a warm spot for 1 hour to rise and double in volume.

    Place the risen dough on a floured surface, gently knead it, and divide it into 8 equal parts. Roll out each part into an oval or round shape, about 1 cm thick.

    Preheat oven to 180°C. Arrange the Nazuki on a baking sheet lined with parchment paper. You can brush the tops with egg yolk for a golden color. Bake for 25-30 minutes, until golden brown.
