    Preheat oven to 180°C (350°F) and line a baking sheet with parchment paper.

    In a large bowl, mash the ripe bananas thoroughly with a fork until smooth.

    Add the rolled oats, chopped dates, melted coconut oil, cinnamon, vanilla extract, and salt to the mashed bananas. Mix well until all ingredients are thoroughly combined. If desired, stir in the chopped walnuts.

    Using a spoon, drop spoonfuls of the mixture onto the prepared baking sheet, forming small cookies. Slightly flatten each cookie.
