Onion Soup
A vitamin-rich and delicious onion soup, perfect for cold weather. Serve with crispy baguette slices.

Preheat the oven to 160°C.

Slice the onions into thin half-rings. Peel the garlic cloves.

In a pot, add about 4 tablespoons of olive oil, salt, and the onions. Add sugar and nutmeg, stir. Sauté, stirring every 10 minutes.

Place the whole garlic cloves on top of the onions, cover the pot with foil, and place in the oven at 160°C for 1 hour, stirring several times during this time.

Transfer the pot to medium heat, pour in 1-1.5 liters of cold drinking water. Bring to a boil and cook for 20 minutes.

Add salt and pepper.

While the soup is cooking, sauté baguette slices in olive oil on both sides until golden brown.
