This is a Georgian twist on the traditional Easter Paska, enriched with carrot jam and aromatic spices. The dough is soft and airy, while the jam gives it a special flavor and texture.

  • Warm Milk120 ml
  • Egg1 ცალი
  • Cloves3 ცალი
  • Cardamom3 ცალი
  • Orange juice30 ml
  • Lemon juice30 ml
  • orange zest1 სუფრის-კოვზი
  • Vanilla extract½ ჩაის-კოვზი

    Dissolve the yeast and 1 tsp of sugar in warm milk, let it sit for 10 minutes.

    Whisk sugar and butter (room temperature) until light and fluffy. Add the egg and baking powder.

    Gradually add the flour, the dough should be smooth, thick and sticky.

    Cover with plastic wrap and let it rest for 1 hour.

    Place the cinnamon stick, cloves and cardamom in a hot pan. When you smell the warm spices, add half an orange and half a lemon juice, let it sit for a few minutes and strain.

    In the same pan, sauté 3 small diced carrots, raisins and 3 tbsp of sugar over medium heat.

    When the sugar melts, add the orange and lemon juice (infused with spices), 1 orange zest, a little vanilla.

    Mix the jam into the rested dough.

    Grease and flour the mold. Fill the mold halfway, cover and let it rest for 30 minutes.

    Preheat the oven to 160 degrees Celsius and bake for 40-45 minutes.
