Phkhali and Mchadi Sushi Imeretian Style

This is an original dish where traditional Imeretian phkhali and mchadi are presented together in the form of sushi. It's perfect for a festive table or just a delicious snack.

  • Water (for dough)200 ml
  • Water (for Pkhali)50 ml

    Wash the phkhali (greens) thoroughly and boil until tender.

    Drain the boiled phkhali and chop finely. Add finely chopped dill, cilantro, onion, garlic, leek, hot red pepper, ground walnuts, and salt to taste. Squeeze well and add a little boiled water to bind.

    For the mchadi dough, add salt and dried mint to the corn flour. Knead a medium-thick dough with water.

    Transfer the dough to kitchen cellophane and give it a rectangular shape. Sprinkle with chopped leeks and walnuts.

    Place sulguni cheese on top and roll it up like a sushi roll.

    Transfer to a greased baking sheet lined with parchment paper and bake at 180 degrees Celsius until golden brown.
