Pkhali with Mchadi Crumble and Cheese
This is an original starter that combines traditional Georgian ingredients with a modern approach. The dish includes caramelized onions, a walnut filling, fried zucchini, and Mchadi crumble, giving it a unique flavor.
Ingredients

Thinly slice the red onion.

Place the sliced onion, honey, salt, and apple cider vinegar in a saucepan. Caramelize over low heat, stirring occasionally.

In a blender, whip together the roasted almonds, walnuts, and chestnut flakes. Add the cottage cheese and matsoni and mix well until a homogeneous mass is obtained.

Slice the zucchini into thin slices.
