Pkhlovani (Spinach and Walnut Salad)
Pkhlovani is a traditional Georgian salad made from boiled spinach, walnuts, garlic, and cilantro. It's a healthy, aromatic, and delicious dish, perfect as a side or a standalone meal.
Ingredients

Wash the spinach thoroughly, place it in boiling salted water, and cook for 5-7 minutes until tender. Then drain, cool, and squeeze out all excess liquid.

Pass the squeezed spinach, walnuts, garlic, fresh cilantro, ground coriander, blue fenugreek, red pepper (if using), and salt through a meat grinder or blend until a homogeneous mass is formed. Traditionally, the mixture is kneaded by hand.

Add vinegar (optional) to the mixture and mix well. Taste and add more salt or spices if needed.

Garnish the Pkhlovani with pomegranate seeds or fresh cilantro leaves and serve cold.
