    Pour the freshly squeezed pomegranate juice into a heavy-bottomed saucepan.

    Place over medium heat and bring to a boil. Then reduce the heat and simmer until the volume is halved and the sauce slightly thickens (about 15-20 minutes).

    Add sugar, salt, and black pepper. Stir well until the sugar is completely dissolved. Taste and add more sugar or salt if needed.

    Remove from heat and stir in the finely chopped cilantro, minced garlic, and optionally, red pepper flakes.

    Cool to room temperature, then refrigerate until completely chilled. The sauce will thicken further as it cools.
