    Preheat oven to 200°C. Prick the potatoes with a fork and bake until soft (about 45-60 minutes).

    Peel the hot potatoes and mash them immediately.

    Add salt and egg yolks to the mashed potatoes. Knead with flour. Try to use the minimum amount of flour so that the dough is soft. If the dough is too sticky, apply a little oil to your hands.

    Make long strips from the dough and cut into pieces. If desired, you can shape them with a fork.

    In a pan (where the gnocchi will be added later), sauté the garlic in olive oil.
