Potato Pies and Khachapuri on Skewers
This is an original Georgian dish that combines potato pie and cheese khachapuri on one skewer. The dough is made with yeast, and the filling is saturated with potatoes and cheese. Bake in the oven and serve warm.
Ingredients
- Vegetable oil60 ml
- Water (Potato Broth)200 ml

Boil the potatoes and transfer the liquid to another container. Cool the potato broth.

Add yeast, salt, and flour to the cooled potato broth. Knead the dough and finally add the oil. Knead well and let it rise.

Add finely chopped onion, dill, black pepper, salt, and butter to the potatoes. Prepare small potato balls and build them on a wooden skewer.

Grate the cheese and add semolina. Make small cheese balls and build them on a wooden skewer.

Divide the dough into four parts and let it rest for 15 minutes.

Roll out the dough, cut it lengthwise, and individually wrap the potatoes built on a skewer, as shown in the photo.

Brush with a mixture of egg yolk and a little oil.
