This is a simple yet incredibly delicious Georgian dish, prepared in a traditional clay pan called a ketsi. Golden, crispy potatoes, infused with garlic and fresh herbs, make for a truly comforting meal.

    Wash the potatoes thoroughly, peel them, and cut into medium-sized wedges or half-moon shapes.

    Pour sunflower oil into the ketsi and heat it well over medium heat. Add the chopped potatoes.

    Fry the potatoes, stirring frequently, until they are golden brown and crispy on the outside, and tender on the inside. This will take approximately 20-25 minutes.

    While the potatoes are frying, finely chop the garlic and cilantro.

    Once the potatoes are ready, add the chopped garlic, salt, and black pepper. Mix well and cook for another 2-3 minutes to allow the garlic to release its aroma.

    Remove from heat, sprinkle with chopped cilantro, and serve immediately, preferably directly from the ketsi.
