    To prepare the dough, cut the softened butter into squares and mix it with the flour by hand until the mixture resembles breadcrumbs. Then add a little water and a pinch of salt. Knead the dough until it is soft and does not stick to your hands. Form the dough into a ball, wrap it in cellophane and refrigerate for 1 hour to flatten it well.

    Roll out the dough on a floured surface, fold it, and roll it out again. Repeat this procedure three times. This will make the dough lighter. Then, line the rolled-out dough into a round baking pan and prick it with a fork.

    Bake in a preheated oven at 180 degrees Celsius for 12-15 minutes. Then take it out and wait for it to cool.

    Cut the bacon into small pieces and fry until brown.

    Whisk the eggs, then add milk, cream, salt, and pepper, and pour into the already baked crust. Then add the grated cheese and bacon.

    Cut the tomato into round slices and arrange them on top.

    Reduce the oven temperature to 160 degrees Celsius and bake the quiche for 30-40 minutes or until the egg filling has set. To check, you can gently move the baking dish, and if the egg filling jiggles inside, it needs more cooking time.
