    Peel and chop the quince and apple (if using) into small pieces.

    Place the chopped fruit in a cast iron pot, add water, and cover with a lid. Set over low heat.

    Stir occasionally with a wooden spoon to prevent sticking. The fruit should soften (about 45 minutes).

    Once the fruit is soft, add sugar and simmer for 15 minutes. The mixture will darken slightly.

    Transfer to a hand blender and blend (or mash with a fork).
