    Gently wash the raspberries and dry them thoroughly. Ensure all raspberries are whole and undamaged.

    In a large pot, layer the raspberries and sugar. Leave for 3-4 hours, or overnight, to allow the raspberries to release their juice.

    Place the pot over medium heat. Slowly bring to a boil, stirring constantly until the sugar is fully dissolved. Skim off any foam that forms on the surface.

    Reduce the heat and simmer gently for 30-40 minutes, or until the jam thickens. Stir occasionally and continue to skim off foam. Add the lemon juice 5 minutes before the end of cooking.

    Remove the finished jam from the heat and let it cool. Then transfer to sterilized jars and seal tightly. Store in a cool, dark place.
