    Place the beet greens in cold water and boil until the stems are tender. Drain and let cool.

    Boil the beets with their skins on, let cool, peel and grate.

    Squeeze the grated beets to remove excess liquid.

    Squeeze the cooled beet greens well and finely chop with a knife.

    Finely chop the onion. If desired, pour vinegar over it and let it sit for a while.

    Grind the walnuts in a meat grinder or blender. Mix with chopped herbs (celery, cilantro, parsley), minced garlic, chili pepper, salt, and pomegranate seeds (optional).
