Red Plum Sauce
Red Tkemali is an integral part of Georgian cuisine, adding a special aroma and flavor to any dish. Its sour-sweet and slightly spicy taste is ideal for grilled meats, potatoes, and many other dishes.
Ingredients
- Fresh Cilantro1 bunch
- Fresh dill½ bunch
- Ombalo (pennyroyal mint)½ bunch
- Dried red chili pepper½ tsp
- Salt1 tsp

Wash the plums thoroughly and place them in a pot. Add enough water to cover the plums. Cook over medium heat until the skins burst and the plums are soft (about 20-30 minutes).

Cool the cooked plums and pass them through a sieve to separate the pits and skins. You should get a smooth puree.

Finely chop or crush the garlic, cilantro, dill, and ombalo (pennyroyal mint).

Return the plum puree to the pot. Add the chopped garlic, herbs, red chili pepper, and salt. Mix well.

Simmer over low heat, stirring occasionally, until the sauce thickens slightly (about 15-20 minutes). If the plums are very sour, you can add a little sugar to taste.

Cool the finished red Tkemali and transfer it to a clean, airtight container. Store in the refrigerator.
