Roast Pork Ribs
This is one of the most distinguished dishes of the Georgian supra, known for its juiciness and aroma. The ribs are slowly roasted in the oven until they develop a golden, crispy crust, while remaining tender and flavorful inside. It's perfect for large gatherings or a family dinner.

Wash the pork ribs, pat them dry with paper towels, and cut them into desired sizes.

Slice the onions into rings, and finely mince or crush the garlic.

In a large bowl, combine the ribs, sliced onions, garlic, salt, black pepper, and red pepper (if using). Mix well to ensure all ribs are evenly coated with the spices. Drizzle with oil and mix again. Cover and let marinate for at least 30 minutes at room temperature, or for better results, several hours in the refrigerator.

Preheat the oven to 180°C (350°F). Arrange the ribs in a single layer on a baking dish. You can cover with foil for the first 60-90 minutes to keep them juicier.

Bake at 180°C (350°F) for approximately 2-2.5 hours, or until the ribs are tender and have a golden-brown color. If you covered them with foil, remove it for the last 30-40 minutes to allow the skin to crisp up.

Remove the cooked ribs from the oven and let them rest for 10-15 minutes before serving. Serve hot with a fresh salad or roasted potatoes.
