Royal Pakhlava
Royal Pakhlava is a delicious Georgian dessert made with thin layers of dough, a walnut filling, and sweet syrup. It is a special dessert, perfect for festive occasions.

In a bowl, combine flour, egg, 50g of melted butter, warm water, and salt. Knead the dough for 10-15 minutes until it becomes elastic. Let it rest for 30 minutes.

Divide the dough into 16-32 small balls (about 35 grams each) and one ball about 45 grams. Place in the refrigerator for 4-5 hours.

Chop the walnuts and mix with sugar and cinnamon.

Melt the remaining butter (150g).

Preheat oven to 180°C.

Brush the bottom of the baking pan with melted butter. Roll out the first sheet of dough (the larger ball) and place it in the pan. Brush with butter. Roll out the next sheet, place it on top, and brush with butter. Repeat the process. Sprinkle walnut mixture on every fifth layer.

Cut the pakhlava into desired pieces and brush with egg yolk.

Bake at 180°C for 25-30 minutes, until golden brown.

Prepare the syrup: In a saucepan, combine honey and water. Bring to a boil and simmer for 2-3 minutes.

Remove the pakhlava from the oven, pour the syrup over it, and return to the oven for another 5-10 minutes.

Cool the pakhlava completely and then cut into pieces.
