Salmon with Aratsimgali, Pomegranate Reduction, and Ajika Sorbet
This is a sophisticated dish that combines the tenderness of salmon with the creamy texture of aratsimgali, the sweetness of pomegranate reduction, and the spicy coolness of ajika sorbet. The dish is perfect for special occasions.

Sous-vide the salmon fillet at 50 degrees Celsius for 30 minutes.

Aratsimgali: In a saucepan, add butter, then corn flour and sauté for about 2 minutes. Pour in milk and cream, then egg yolks and smoked Sulguni cheese. Transfer to molds.

Pomegranate reduction: Pour pomegranate juice into a saucepan, add sugar, salt, nasharabi, and cloves. Reduce.

Red decoration: Add oil, salt, and water to wheat flour. Place in silicone molds and bake until crispy.
