Satsivi with Turkey
Satsivi is a traditional Georgian dish made with walnut sauce and poultry (usually turkey or chicken). This recipe has been tested over the years and is guaranteed to be incredibly delicious!
Ingredients

Place the cleaned turkey in a pot filled with water. Add cilantro tied with string, cloves, black peppercorns, and 1 peeled onion. Boil the turkey until tender.

Place the boiled turkey on a baking sheet and bake in the oven until golden brown (about 20 minutes at 180 degrees Celsius).

Cut the cooled turkey into medium-sized pieces.

Sauté finely chopped onions in turkey broth fat until softened and golden brown.

Grind walnuts, onions, and garlic in a meat grinder or blender. Add blue fenugreek, coriander seeds, saffron (if using), and salt to taste.

Mash the sautéed onions and egg yolks and pass them through a sieve or blend them in a blender with 2 cups of broth. Add enough broth to reach the consistency of sour cream.

Place the turkey pieces in a pot, pour the walnut mixture over them, put on the heat, and bring to a boil, stirring constantly. Once bubbles appear, remove from heat.

Add lemon juice to the cooled dish and mix well. Serve cold.
