Spinach Khinkali with Tarragon
Spinach Khinkali with Tarragon is a delicious and healthy dish, especially good during fasting. Fresh spinach and tarragon give it an amazing aroma and flavor.

Sift the flour into a bowl. Add salt dissolved in water (dissolve 5 g of salt in 250 ml of water).

Knead a stiff dough. Set the dough aside and let it rest for 30 minutes.

Chop the cleaned spinach coarsely.

Add salt, pepper, finely chopped tarragon, cilantro, and oil to the spinach. Mix well.

Roll out the dough into a thin layer. Cut out small circles with a glass or a special mold.

Roll each circle slightly thinner. Place 1 tablespoon of spinach filling in the center.

Fold the khinkali in the traditional shape.

Bring water to a boil in a large pot, add salt. Carefully drop the khinkali into the boiling water.
