  • Blue Fenugreek1 tsp
  • Marigold Petals (ground)½ tsp
  • Vinegar1 tbsp

    Wash the spinach thoroughly, place it in boiling salted water, and cook for 5-7 minutes until tender. Then drain, cool, and squeeze out excess liquid very well. The better you squeeze, the better the pkhali will be.

    Finely chop the squeezed spinach or pass it through a meat grinder.

    Grind walnuts, onion, garlic, and cilantro together in a meat grinder or blender until a uniform paste is formed.

    In a large bowl, combine the chopped spinach, walnut mixture, blue fenugreek, ground marigold petals, red pepper (optional), vinegar, and salt. Mix thoroughly by hand until all ingredients are well combined and a uniform consistency is achieved.

    Form small balls or oval-shaped pkhali from the mixture. Optionally, garnish with pomegranate seeds or chopped cilantro. Serve chilled.
