  • Matsoni Starter50 ml

    Warm the milk to 37-40 degrees Celsius. Add the matsoni starter and mix well.

    Cover warmly and leave for 6-8 hours, or until the matsoni sets.

    Remove the cream from the matsoni (optional).

    Prepare a sterile bandage or cheesecloth folded into 16 layers.

    Transfer the matsoni to the cheesecloth and place it in a strainer. Put the strainer over a bowl to drain the whey. Refrigerate for 12-24 hours.

    Periodically remove the drained whey.
