  • Heavy cream (36% fat)250 ml
  • Lemon juice15 ml
  • cold water50 ml

    Soak the gelatin in cold water for 5 minutes.

    Chop or blend the strawberries, lemon juice, and sugar with a chopper or blender until a smooth mass is obtained.

    Separately, whip the cream to a stiff peak consistency and refrigerate.

    Place the strawberry mixture in a small saucepan over medium heat and boil for 5-10 minutes, until slightly thickened.

    Remove from heat, add the gelatin mixture and stir well, then cool, but do not let it set.

    Divide into molds and refrigerate for at least 4 hours.
