    In a food processor, combine pitted dates, shredded coconut (80g), almond flour, lemon juice, lemon zest, vanilla extract, and a pinch of salt.

    Process on high speed until the mixture forms a sticky dough that comes together when pressed. If too dry, add 1-2 teaspoons of water as needed.

    Take about 1 tablespoon of the mixture and roll it into small, uniform balls with your hands. Repeat until all the mixture is used.

    Optionally, roll each bliss ball in the remaining shredded coconut (20g) to coat evenly.
