Suluguni on Ketsi
This is a simple yet incredibly delicious dish often found on Georgian tables. Baked on a hot clay pan (ketsi), the suluguni cheese becomes slightly crispy on the outside and wonderfully soft on the inside, perfect for breakfast or as a side dish for lunch.

Slice the suluguni cheese into pieces about 1-1.5 cm thick.

Place the ketsi (clay pan) over medium heat and heat it thoroughly.

Spread butter on the hot ketsi.

Arrange the sliced suluguni pieces on the buttered ketsi.

Bake over medium heat until the suluguni starts to melt and develops a golden crust on both sides. You can flip it once to ensure even cooking.
