Taflakverebi
Taflakverebi, also known as Prianikebi, are traditional Georgian cookies. They are characterized by their soft texture and sweet glaze, making them a special dessert.

Add sugar to 100g of flour, mix well and slowly dissolve in boiling milk, stirring quickly with a spoon. Set aside for a while and let it cool.

Then add the egg yolk (keep the egg white separately), add oil, baking soda, salt. Mix well until a homogeneous mass is obtained (do everything with a spoon). Stir in the remaining flour with a spoon.

You should get a sticky dough, but not pourable, it should keep its shape. Sprinkle flour on the work surface, transfer the dough, sprinkle flour on top, give it an oblong shape, divide into 20-25 parts. Roll into balls, place each one on a baking sheet lined with paper, press lightly with your hand and carefully flatten it a little.

Bake at 180⁰C in a preheated oven for about 10-12 minutes. Check readiness with a wooden skewer. The cookies should cool down well, completely.

While the cookies are cooling, make the glaze: add the egg white to 120g of powdered sugar, stir with a fork. When you get a homogeneous mass, add lemon juice, the glaze will get a bright white color.

Dip the cold cookies in it, then place them on a wire rack, line it with parchment paper underneath and leave it until the glaze dries well.
