This is a simple method for preserving tkemali for the winter, which retains the taste almost unchanged. Tkemali will be as fresh in winter as it is in summer.

    Wash the jars and lids of the required capacity and sterilize them with boiling water.

    Wash the tkemali and drain it in a colander to prevent excess water from entering the jar.

    Put the tkemali in a sterilized jar, pour boiling water over it, and cover with a lid.

    Leave it like this until the water temperature becomes warm.

    Pour out the water and pour in freshly boiled water again.

    Seal the jar and keep it warm for 2 or 3 days.
