Turkish Style Green Pepper Dolma

Finely chop the onion.

In a large pan, pour ¾ of the oil, add the onion and 1 tsp of salt. Sauté over medium heat until the onion changes color.

Add the rice and continue to sauté for another 10 minutes.

Peel and deseed the tomatoes, cut into cubes. Finely chop the greens.

Add ½ cup of hot water to the rice and chopped tomatoes, raisins, walnuts, greens, sugar to taste (depending on how sweet the tomatoes are), salt and black pepper, mint, dill, and the remaining spices. Mix.

Simmer for 15 minutes. Then remove from heat.

Cut off the tops of the peppers, carefully remove the seeds, and fill with the prepared stuffing.

Cover with their tops and arrange vertically in a saucepan in one layer. Pour in 1 cup of water and the remaining oil. Add salt and pepper and place over low heat. Cook for 40-50 minutes.
