Vegan Khinkali with Spinach and Mushrooms

Delicious vegan Khinkali, made with spinach and mushroom filling. This is a vegan version of the traditional Georgian dish, perfect for vegetarians and those fasting.

  • Water (for dough)250 ml
  • Vegetable oil50 ml

    Prepare the dough: Add water and salt to the flour and knead a stiff dough for about 20 minutes. Let the dough rest.

    Finely chop the spinach, add salt and mix well. After 5 minutes, squeeze out the excess water and add: onion, dill, cilantro, tarragon, fresh chili pepper, fresh garlic leaves, cumin, salt and red pepper flakes to taste, and oil.

    Cut the mushrooms into cubes, boil them, and fry them in a little oil.

    Roll out the dough, cut out circles, and flatten them. Fill half with mushrooms and half with spinach.
