White Icing
This is a simple recipe for white icing, perfect for Easter cakes or other pastries. The icing is made with gelatin, sugar syrup, and vanilla.

Soak the gelatin in 120 ml of cold water.

In a saucepan, combine the sugar and 80 ml of water. Place over low heat and bring to a boil. Do not stir.

When the syrup reaches a temperature of 112°C or crystallizes when dropped in water, remove from heat.

Gradually add the hot syrup to the soaked gelatin, while mixing with a mixer. Add vanilla.

Whisk until the mixture thickens.

If desired, add food coloring.

Dip the Easter cakes in the icing. If it hardens too much, you can warm it on a steam bath.
