Apokhti Khinkali

Apokhti Khinkali is a traditional Meskhetian dish. These are small khinkali filled with dried, salted meat called apokhti. The combination of garlic and black pepper gives the khinkali a special flavor.

    In a bowl, add flour, salt, and egg. Gradually add water and knead a stiff dough.

    Wrap the dough in plastic wrap and let it rest for 20 minutes.

    Chop the apokhti into very small pieces (raisin-sized). Add minced garlic and black pepper. Mix well.

    Divide the dough into small balls. Roll out each ball thinly (to the thickness of khinkali dough) and cut into rectangular pieces with a knife.

    Place the apokhti filling on each rectangular piece and fold into a khinkali shape, leaving a small opening at the top.

    Boil the khinkali in salted water until they float to the surface.

    Melt butter in a pan, add finely chopped onion and sauté until golden brown.

    Remove the khinkali from the water and place on a plate. Pour the butter-fried onions over the khinkali.
