Beef Tenderloin with Carrot Tart
This is a refined dish where beef tenderloin perfectly complements the carrot tart and lemon-wine reduction. The dish is distinguished by a variety of aromas and visual effects.

Marinate the beef tenderloin in pepper, salt, and oil.

Grind the almonds in a blender, add salt and 100g of butter, knead the dough, roll it out to 1 cm thickness, cut into round shapes and bake in the oven at 160 degrees Celsius for 10-15 minutes.

Cut the carrots into thin slices and arrange them in round molds in coils. Wrap the bottom of the mold with foil, sprinkle with 50g of butter and grate half a lemon zest. Bake in the oven at 180 degrees Celsius for 30-40 minutes.
