Bread Boiled in Bean Broth
This is an ancient and simple Georgian dish made with bread boiled in bean broth, herbs, and Kakhetian oil. Despite its simplicity, it has a memorable aroma and taste.

Ingredients

Wash the beans and soak them in water for several hours, preferably overnight.

Place the beans in a pot, add water (about 1.5 liters), red chili pepper and bay leaf. Bring to a boil and simmer over low heat until the beans are tender (about 1-1.5 hours).

Cut the bread into medium-sized pieces and slice them in half so that the juice soaks in well.

Place the bread pieces in the bean broth and cook for 5-10 minutes, until the bread is soft but does not fall apart.

Cut the onion into thin rings, finely chop the cilantro and parsley.

Remove the boiled bread from the pot and place on a plate. Sprinkle with chopped onion, cilantro, parsley, salt and black pepper. Drizzle with Kakhetian oil.

Repeat layering until all ingredients are used. If desired, sprinkle some cooked beans on top.

You can eat the remaining beans in the pot as a soup or as a separate dish.
