    Wash the cherries thoroughly and remove the pits. Try to keep the cherries intact.

    In a large pot, combine the sugar and water. Place over medium heat and stir until the sugar is completely dissolved and the syrup comes to a boil.

    Once the syrup boils, carefully add the pitted cherries. Reduce the heat to low and simmer gently, stirring occasionally to prevent the cherries from breaking apart.

    Continue to simmer for about 45-60 minutes, or until the syrup thickens and the cherries become translucent. To check for readiness, drop a small amount of syrup onto a cold plate; if it doesn't spread when cooled, it's ready.

    Remove the pot from the heat and allow the jam to cool to room temperature. Then, transfer it into sterilized jars and seal tightly.
