Chicken Bazhe

    Boil the chicken until tender. Remove the chicken from the broth and let it cool.

    Cut the cooled chicken into small pieces and remove the bones.

    Blend or grind together the walnuts, garlic, dried coriander, blue fenugreek, saffron (if using), salt, and red pepper flakes (if using).

    Dissolve the walnut mixture in boiled and cooled water, stirring well until a smooth mass is obtained. Add vinegar.

    Add the chopped chicken to the walnut sauce and mix well.
