    Wash the chicken well and cut into pieces.

    Wash and chop the onion, carrot, and celery.

    In a large pot, place the chicken, add water, onion, carrot, celery, salt, and pepper. Bring to a boil, then reduce heat. Simmer for about 1 hour, or until the chicken is cooked through.

    Finely chop the tarragon and parsley.

    When the chicken is cooked, remove it from the broth. Strain the broth. Return the broth to the pot. Add the chopped tarragon. Bring to a boil and turn off the heat. Add chopped parsley if desired.
