  • Vanilla extract5 ml
  • Milk15 ml

    To prepare the dough, mix egg yolks, sugar, and matsoni in a bowl. Add softened spreadable fat (or butter), baking powder, and vanilla. Mix well and gradually add flour until you get a medium-thick dough.

    Divide the dough into three parts and let it rest for a short time.

    To prepare the meringue filling, whisk egg whites and sugar until stiff peaks form. Add vanilla and lemon zest.

    Roll out the first layer of dough and transfer it to a baking pan. Prick it with a fork. Spread 1 tbsp of honey.

    Spread half of the meringue filling on the first layer of dough, sprinkle with chopped walnuts and raisins.

    Place the second baked dough layer on top, spread with honey, meringue filling, and sprinkle with walnuts and raisins.

    Place the third layer on top, spread with a mixture of egg yolk and milk. Cut into diamonds or squares.

    Bake at 180°C (350°F) for 45-50 minutes, or until golden brown.
