Eclair
Delicate eclairs made with choux pastry and filled with cream. This recipe allows you to prepare about 10 eclairs, which is perfect for a family gathering or dessert.

In a saucepan, combine water, sugar, salt, and butter. Place over medium heat and bring to a boil.

Once boiling, add the sifted flour and stir vigorously with a wooden spoon until the dough comes together and pulls away from the sides of the saucepan.

Transfer the dough to a bowl and let it cool slightly for about 10 minutes.

Whisk in the eggs one at a time, mixing well after each addition. The dough should be smooth and glossy.

Preheat oven to 200°C (390°F). Line a baking sheet with parchment paper.

Transfer the dough to a piping bag fitted with a large round tip. Pipe eclairs onto the prepared baking sheet.

Bake for 20 minutes. Then, reduce the oven temperature to 160°C (320°F) and bake for another 20 minutes, or until the eclairs are golden brown and dry.

Turn off the oven and slightly open the door. Leave the eclairs in the oven for 10 minutes to cool down.
