Gebzhalia
Gebzhalia is a delicious Megrelian dish made from cheese rolls in a fragrant mint sauce. Elga Tabatadze's recipe uses matsoni (Georgian yogurt) instead of the traditional nadugi cheese, giving the dish a special tenderness.

Slice the Suluguni cheese into thin slices.

Mix matsoni, chopped mint, garlic, and salt together.

Bring water to a boil. Optionally, add milk to the boiling water, reduce heat, and carefully place the rolls in the water.
